Chia Seed Pudding for Vata Dosha

Vata pacifying recipe, may be taken in moderation by both Pittas and Kaphas (not more than 1 tablespoon of Chia seeds per day)

Ingredients:

2 cups almond milk

3 tablespoons honey

1/2-cup organic chia seeds

¼ tsp. cardamom powder

7-8 threads of saffron

2 tbsp. sliced almonds

2 tbsp. shredded unsweetened coconut

 

Method:

1.  In a 1-quart jar, combine the almond milk, coconut, honey, and sliced almonds.  Mix well.

2. Add the chia seeds, close the jar tightly with a lid, and shake 5-6 times to make sure chia seeds separates and you don’t see lumps.   

3. Refrigerate overnight.

4. Top with cardamom and saffron, mix well. 

Note: Vata Doshas should be careful not to eat as a chilled dessert, let the pudding sit for a few minutes while it warms to room temperature.

The word Chia means “Strength,” because it gives energy. Chia is considered to be a super food, loaded with nutrients.

Such a tiny seed, yet it contains antioxidants, omega fatty acids, calcium, fiber, and also protein!

Chia seeds swell and become very soft and gummy, making you feel fuller, and are, therefore, helpful for weight loss.

This healthy dessert is easy to make.  Anyone and their child can do it!
