Breakfast Rice (4 servings)

1 cup washed organic short grain brown rice

1 ¼ cups milk (2% or whole)

1 ¼ cups filtered water

½ teaspoon kosher or sea salt

1 ½ tablespoon maple syrup (grade b) OR organic coconut sugar

1 ½ teaspoon cinnamon (freshly ground is unbelievably good!)

½ cup toasted chopped almonds (you might be able to find these packaged)

½ teaspoon organic Maca Powder (optional but very good for grounding Vata Dosha)

 

Combine water and milk in a saucepan and bring to a boil, then add rice and salt. Cover and simmer for about 35 minutes or until liquid is mostly absorbed and rice is cooked. Remove from heat and let cool for about 8 minutes.

Stir in maple syrup or coconut sugar, maca powder, and cinnamon and top with almonds.
