Celiac disease is a very serious disorder in which the body can’t tolerate gluten, which is in wheat and other grains. About 1% of the U.S. population has this disorder. There is another condition called non-celiac gluten sensitivity. The symptoms of this condition include bloating, excess gas, and fatigue. It is estimated that about 6% of the U.S. population has this disorder. The best cure for both of these is to completely stop eating products that contain gluten. The Gallup Poll estimates that one in five Americans is experimenting with gluten-free products while the number of people who avoid wheat and other grains containing gluten is continually rising.

Wheat has been a part of Ayurveda and many other traditional systems of medicine for hundreds, if not thousands of years, so it is not clear why gluten has recently become such a problem. Is it due to pesticides or the way wheat is treated? Is it because of an imbalanced microbiome? We simply don’t know the answers to any of these questions.
